Paneer Magaz Curry



Water melon seeds also known as Magaz are a really good source of proteins, vitamins and minerals making it a powerhouse of nutrients. It has some terrific medical benefits as well such as cognitive enhancement and nerve strengthening. In this recipe we will be preparing an easy and delicious Paneer curry with a unique paste of magaz and cashew which can be enjoyed with Roti and Naan. So lets start....

PREPARATION TIME : 60 to 90 Mins

SERVES : 3 - 4

INGREDIENTS : 
  1. Paneer - 500 gms  
  2. Milk - 150 ml 
  3. Magaz ( watermelon seeds ) - 3 tbs  
  4. Cashew - 5 no.
  5. Oil / Ghee -  2 tbs 
  6. Black Pepper Powder - 1 tbs
  7. Bay leaves - 2 no. 
  8. Kasoori Methi -  2 tbs 
  9. Sugar  - 1 tbs 
  10. Onions- 1 no. (Medium slice)
  11. Green chillies - 3 no.
  12. Capsicum - 1 no. (Medium slice) 
  13. Carrot - 50 gms ( Grated ) 
  14. Garlic - 7-8 pods 
  15.  Salt - as per taste 

STEPS FOR PREPARATION 

  • Get all the ingredients and arrange them so that you don't miss out on anything. 
  • Take the magaz and cashew, grind them with a little water to get a smooth paste out of it. 


  • Heat oil / ghee in a kadhai and  add the paneer to it and let it cook for 2-3 mins.

  • Take the paneer out from the kadhai and directly put it in a bowl with the milk and let it soak in the milk.


  • Add some more oil / ghee in the kadhai and put bay leaves , chopped green chillies and garlic.

  • Add sliced onions and cook for 2-3 mins in medium flame with a lid.

  • Once done, add the carrots and cook for 2-3 mins and then the capsicum. 

  • When the vegetables are almost cooked add salt and then add the soaked paneer along with the milk directly into the kadhai. 

  • Let it cook for 4-5 mins and then add the magaz cashew paste that was prepared initially.

  • Once the cashew paste is mixed and properly cooked with the vegetables add black pepper powder , sugar and kasoori methi to the gravy and mix well for 2-3 mins.

  • Yummy healthy paneer magaz currry is ready to be served with roti or any other indian bread.



NOTE :
  • You can also add a small pinch of ajinomoto to enhance the flavour.
  • If you want the gravy to be less spicy then reduce the no of green chillies accordingly.
