Kesari Tukda




Kesar - Considered to be one of the most precious spices in India is used as a seasoning agent in a varied range of delicacies. It finds its place in yummy desserts such as kheer/phirni, kulfi and at the same time works as a core ingredient of everyone's favourite Biriyani. In this recipe we will be preparing a unique healthy dessert using rawa and kesar .This recipe can be prepared as a morning breakfast as well for kids as well as grown ups. So lets get started...

PREPARATION TIME : 20 Mins

SERVES : 3 - 4 

INGREDIENTS :
  1. Rava ( Sooji ) : 1 cup ( light roasted )
  2. Ghee : 1 tbs
  3. Sugar : 1/2 cup 
  4. Water : 2-3 cup 
  5. Kesar : 6-7 strands 
  6. Dry Fruits :
  7. Rasins : 10 - 15 
  8. Almond : 10-15
  9. Cashew Nuts :  10-15
  10. Food colour ( yellow ) : Pinch ( Optional )  

STEPS FOR PREPARATION : 
  1. Roast the rava with ghee for 4-5 min in medium or low flame. ( Don't change the colour )

  2. In another bowl take 2-3 cups of water , add some kesar strands and a pinch of food colour ( optional ) to it and let it boil properly.

  3. After the rava is cooked properly add the boiled water to it and cook it till the rava gets cooked properly.

  4. After its cooked and you get a thick yellow colour mixture of rava, add the sugar to it and let it mix properly. 

  5. Take some ghee in a kadhai and roast the dry fruits according to your choice of texture and colour. In this recipe I have used cashew, badam and raisin (kishmish).



  6. Add the dry fruits to the cooked rava and mix it. 

  7. Spread the mixture in a plate and make it one inch thick ( spread it equally )



  8. Keep it in fridge to set it cool.

  9. After 15-20 mins take it out and cut it into smaller pieces of your desired shape.


  10. Serve it as a desert after the meal or as a morning breakfast. 

NOTE :  Add sugar after the rava is cooked with water so that it gives a glazy look to the mixture.
